This is our take on Satay chicken, you’d normally associate with skewers and a peanut sauce. This is a delicious curry, definitely not one for those on a diet or any allergies to peanuts or crustaceans, with boned chicken thighs marinated in a rich satay sauce, then par cooked in hot oven. This is then added to a very rich satay sauce and slow cooked until tender. This curry is rich, indulgent and absolutely delicious.
