Our Kitchen

This is our 5-star rated kitchen in West Wales, purpose-built alongside our 170-year-old Victorian home. The space began life as a small stone barn, where just a few cows and sheep were kept — not a full farm, but simply how rural households once lived.

Originally, the house was built for the headmaster of the local school. The barn contained enough livestock to sustain the family through the seasons. Today, that same space has been transformed into a modern professional kitchen, yet its history and character remain very much alive — grounding what we do in a place rich with heritage and tradition.

In 2023, we transformed the old barn into a fully equipped commercial kitchen — the heart of what we do today. Here, we cook the same slow-prepared dishes we make for ourselves, our family, and our closest friends.

One of the greatest compliments we receive is that our food tastes like home cooking — especially from customers who recognise flavours from the cultures and countries that inspire our recipes. That authenticity matters to us.

We’re proud to source our ingredients locally, from small farms and producers here in West Wales. In our view, they’re among the finest you’ll find anywhere in the world — and they’re at the core of everything we make.

We source our grass-fed beef and lamb from trusted butchers who work closely with small farms, ensuring full traceability and genuine provenance in every ingredient we use.

Much of our meat comes from traditional breeds such as Welsh Black, Aberdeen Angus, Shorthorn, and Hereford — animals known for developing exceptional flavour thanks to the diverse grasses and wild herbs found in our local pastures.

Every dish is cooked slowly, in small batches, to allow the spices and ingredients to develop depth and character. Once cooked, the food is allowed to cool naturally before entering a blast chiller, bringing the temperature down to 4°C. It is then portioned, labelled, and frozen to –24°C, preserving freshness, texture, and flavour — naturally, without preservatives, additives, or pre-made sauces or pastes.

We never use a base curry stock in any of our dishes. Every masala is created individually for each recipe, giving every curry its own identity, character, and flavour — completely distinct from the next.

By slow-cooking our dishes, the spices have time to develop naturally, building deep, layered, and complex flavours. We season with balance and purpose, allowing the quality, texture, and natural flavour of the meat to shine through — never masked or overwhelmed.
