This sumptuous dish combines two elements: tikka (chunks of boneless chicken marinated in a spicey garlic, ginger and herbed yoghurt) and masala (an onion and tomato-based sauce). The chicken is cooked in a very hot oven, then simmered in a creamy sauce made from onions, tomatoes, butter, cream and spices. Although tikka kebabs came from North India, the rich sauce was developed in Britain, making Chicken Tikka Masala a fusion of Indian and British culinary traditions.
