Rooted in the cooking of South Africa’s Indian community, this is a non-creamy, slow-cooked curry built on layers of spice rather than richness. It’s traditionally made with chicken or lamb, always with potatoes, and famously served with rice or as a “bunny chow” — ladled into white bread to soak up every last drop.

Durban curry is instantly recognisable by its deep red colour and powerful warmth, created using red chilli powder and cayenne rather than garam masala.
